Clara T. Costa editou a partir dos anos 30 do século passado este título, precedido pelo famoso «Guia da Cosinheira Familiar».



Segundo as minhas "averiguações" desconhecem-se as datas das primeiras edições, sendo que, deste título, a sétima edição data de 1957 e a oitava de 1964. Julgo não ter havido reedições.

ESPARREGADO DE CASCAS DE FAVA

Ingredientes

Cascas de fava: 250 gr
Alho: 3 dentes
Azeite: 1 dl
Farinha: 1 colher de sopa bem cheia
Louro: 1 folha
Vinagre: a gosto
Pimenta em grão: a gosto
Sal: a gosto



Preparação

Escolhe as cascas de favas bem tenras (quando ao tirar o “olho” da fava esta ainda fica verde), corta-as ao comprido de ambos os lados de modo a remover os fios.



Lava bem uma a uma em água corrente e deixa em água com vinagre durante mais ou menos meia hora.
Coze as cascas de fava em água fervente com sal a gosto durante 20 a 25 minutos.



Escorre a água da cozedura e reduz a puré utilizando a varinha mágica.



Põe o azeite, o louro e os alhos picados numa frigideira, tempera com pimenta ralada no momento e quando o azeite estiver bem quente (os alhos começam a fritar e a ficar dourados) junta a polpa de cascas de fava e envolve bem no azeite.



Quando a mistura começar a ferver (a borbulhar) junta então uma colher de farinha de trigo bem cheia, junta o vinagre a gosto (eu como gosto do esparregado bem avinagrado juntei duas colheres de sopa) e envolve bem a mistura com a colher de pau até atingir a textura desejada durante mais ou menos 5 minutos.



Corrige o tempero de sal e envolve bem até secar.



Serve quente a acompanhar peixe ou carne, grelhados ou assados.

BROAD BEAN PEEL’S PUREE

Ingredients

Peels of broad beans: 250gr
Garlic: 3 cloves
Olive oil: 1 dl
Flour: 1 heaped tablespoon
Laurel (Bay leaf): 1 leaf
Vinegar: to taste
Peppercorn: to taste
Salt: to taste

Preparation

Choose the most tender broad beans (when removing the “eye” of the bean it is still green), cut them lengthwise on both sides in order to remove “wires” of the peels.
Wash one by one under running water and let it soak for half an hour in water and vinegar.
Cook the broad beans peels in boiling water with a pinch of salt for 20 to 25 minutes.
Drain the cooking water and reduce it to puree using the hand blender.
On a frying pan pour the olive oil, the bay leaf and the minced garlic cloves, and season with peppercorn grated at the time.
When the olive oil starts to boil (the garlic begins to sizzle and becomes golden) join the pulp of peels of the broad beans and involve it very well in the olive oil.
When the mixture starts to boil (bubbling) add a full tablespoon of flour, add vinegar to taste (as I like the vinegary taste of this recipe, I added two tablespoons of vinegar), and involve in the mixture with the help of a wooden spoon, until it reaches the proper texture, for about 5 minutes.
Correct the seasoning adding a pinch of salt if necessary and mix it well, until it dries up.
Serve hot with meat or fish, grilled or baked.
