SOPA DE FEIJÃO COM ARROZ

Ingredientes

Água: 2,5 litros
Feijão manteiga: 400 gr (já cozido)
Cebola: 1
Abóbora menina: 2 pedaços
Cabeça de nabo: 1/2
Azeite: 4 colheres de sopa
Salsa: 1 ramo
Sal: a gosto

Arroz: 2 mãozinhas (+/- 40 gr)
Chuchu: 1 pedaço (opcional)
Cabeça de nabo: 1/2
Louro: 1 folha
Alho: 2 dentes
Vinagre: a gosto

Preparação

Põe o feijão na panela (reserva alguns) com dois litros e meio de água, cebola, abóbora, salsa, metade da cabeça de nabo, azeite, sal a gosto e deixa ferver durante 15 a 20 minutos. Reduz a puré, deixando passar o caldo muito bem.
Junta a outra metade do nabo bem picadinho e, se quiser, o chuchu cortado aos pedacinhos. Deixa ferver durante 10 minutos. Adiciona o arroz e o restinho de feijão e deixa cozer mais 10 minutos, tendo o cuidado de ir mexendo sempre para o arroz não pegar.
Pouco antes de desligar o lume, mistura o alho bem picadinho, a folha de louro, prova e se for necessário rectifica o azeite. Serve com um golpe de vinagre.

BEAN SOUP WITH RICE

Ingredients

Water: 2,5 liters
Butter beans: 400 gr (cooked)
Onion: 1
Pumpkin: 2 pieces
Turnip: 1/2
Olive oil: 4 tablespoons
Parsley: 1 bunch
Salt: to taste

Rice: 2 hands (+/- 40 gr)
Turnip: ½
Chayote: 1 piece (optional)
Laurel (Bay leaf): 1 leaf
Garlic: 2 cloves
Vinegar: to taste

Preparation

In 2,5 liters of water boil the beans (reserve a few), onion, pumpkin, parsley, half the turnip head, olive oil and salt to taste, for 15 to 20 minutes. Reduce to puree.
Join the other half of turnip finely chopped and, if you wish, the chayote also finely chopped. Let it simmer for 10 minutes. Add the rice and the beans, let it cook for 10 more minutes, always stirring so the rice doesn’t stick to the bottom of the pan.
Just before turning off, mix the finely chopped garlic and the bay leaf, savor it and, if necessary, season with more olive oil. Serve with a hit of vinegar.
