AZEITONAS

Ingredientes

Azeitonas: 2 kg
Limão ou laranja: 1
Louro: 1 folha
Alho: 1 cabeça
Erva azeitoneira (erva de Santa Maria) (1): a gosto
Sal: a gosto

Preparação

Retalha a azeitona (dá-lhe três cortes) e escalda com água quase a ferver durante 10 minutos. Repete o processo por três vezes e coloca-as em água fria. Muda a água duas vezes ao dia durante cinco dias.
Ao fim de cinco dias lava bem a azeitona em água corrente, coloca numa taça de barro e tempera com um pouco de sal, uma cabeça de alho picado, uma folha de louro partida ao meio e um limão (ou laranja) cortado em quartos. Pode também juntar erva azeitoneira (também conhecida por erva de Santa Maria). Cobre as azeitonas com água.
Estão prontas a comer passados 5 dias.

OLIVES

Ingredients

Olives: 2 kg
Lemon or orange: 1
Laurel (bay leaf): 1 leaf
Garlic: 1 head
Thyme (1): to taste
Salt: to taste

Preparation

Give three cuts to the each olive and scald with water close to boiling, for 10 minutes. Repeat the process three times and place the olives in cold water. Change the water twice a day during five days.
Then wash the olives in running water, put them inside a clay bowl and season with a pinch of salt, a chopped garlic head, a bay leaf, a lemon (or orange) cut into quarters. May also add Thyme. Cover the olives with water.
The olives are ready to be eaten in 5 days.
